Hey! You're right! I'll have to make some sort of a sauce for the beans though, otherwise they'll just fall off the toast.

Baked Custard

4 slightly beaten eggs

1/4 cup sugar (or less - or use Sweet and Low like I do)

2 cups scalded milk, sllightly cooled (I use skim milk)

1/2 tsp vanilla

sprinkle of nutmeg

Combine eggs, sugar and slowly stir in slightly cooled scalded milk and vanilla.

Pour into individual cups or into one quart size baking dish (I do the big dish).

Sprinkle nutmeg over top to dust;

Set baking dishes into a shallow pan of water and place in 350 degree F. pre-heated oven.

For individual cups bake approx 40 to 45 minutes

For quart baking dish bake approx 60 minutes

Custard is done when a toothpick inserted into the center comes out clean.

Serve either warm or chilled.

Yes, it contains dairy but you can lessen the fat by using skim milk. If this is too sweet you can reduce the sugar - I don't like it sweet either and generally reduce the sugar to less than 1/4 cup. If it isn't sweet enough you can always sprinkle more sweetner over top. The vanilla helps with the flavour

Last night I used some of the lemon pepper pasta I brought back from Italy, and made the recipe they had on the package. (It was in Italian but it was pretty easy to figure out.) My husband and I looooooved it. Unfortunately, I only bought one package of that type. Now I'm kicking myself.

I also made banana bread with walnuts.

Tonight we are having beef stroganoff.

Yesterday we had Greek salad, and cream of broccoli soup. My MIL gave me some garden beets. I love them fried. Anyone ever had that? Gene doesn't like fried beets however, so I used half of them in a beet carrot loaf that is delicious!

Tonight I'm going to cut some chops from a pork loin roast I have, and I'm going to brown them on the stove, bake them, and then drizzle with a honey lemon sauce. Potatoes and leftover greek salad will accompany.

Carla I love beets, boiled beets, roasted beets, harvard beets, loveeeeeeeeeee them!

However! I have never had them fried, in fact it has never occurred to me to fry them...so you just pan fry in slices or pre cook a bit or?

Oh well, I don't even know where to put the updates anymore, but since it's about my dinner I will post it here :) So after my 4th visit to the doctor yesterday (second to my regular since Monday) He finally consulted the GI guy in the same building, and even though some of my results from the 2nd analysis are pending, because I don't have any other severe symptoms (no fever, blood, etc) They finally decided to treat me symptomatically. Which means they gave me that Metronidazole medicine that treats those micro parasites I was talking about and also C difficile. They also gave me another med called Lomotil, which is another type of slowing medication for movements, without stopping them completely, and I take those in addition to the one they gave me on monday for cramps.

So....

Last night for dinner I had a bowl of Cereal (with a slight touch of skim milk, not too much) and a Banana.

I slept like a baby, no cramps whatsoever this morning, and I haven't felt the need to go to the bathroom yet.

And if I feel that good I might actually eat some pasta tonight, with no sauce, but still, pasta :)

Oh, that is awesome, Mephys! I'm glad you're feeling better now. :)

Yeah here seems like you have to harass the doctors to get something, I'm not saying that's all I wanted, but they kept telling me (all of them) that based on my symptoms and my work environment that that;s what they were suspicious about. But because 1 lab result came back negative (and believe me that thing is so small it's hard to miss under a microscope) they were all like oh....dunno. Well I blame mainly the 2 doctors at the urgent care that saw me last week. My family doctor is a little more proactive in trying to help me out. :) He's great.

Im so eager to eat normal food...I mean I was so craving for cereals last night, and I told myself, at this point, all the foods are messing me up and it's not a matter of bland diet or not. I have something that's keeping me from keeping it down, and considering I eat and drink 8 tons of cheese and milk /year, I doubt it's the problem. And if you can put skim milk in custard, why not in the cereals ? Right!

My cereals were good :)

However! I have never had them fried, in fact it has never occurred to me to fry them...so you just pan fry in slices or pre cook a bit or?

I usually parboil them so it doesn't take extra time frying. I use butter, or you could use margarine if you cook with that. No oil though. Slice them in thin slices like you would for scalloped pototoes and then fry. They're best if they have a crispy outside...again, just like a fried potatoe. They are AWESOME.
