Well, I tried to find a creative way to continue using up the pot of beans Joe cooked Saturday. I ended up making a type of casserole. I made up a package of pasta shells and cheese, leaving out the milk and only using butter and cheese sauce but adding an egg, then putting that on the bottom of the casserole dish, then I mixed together the beans with chopped fresh tomatoes and cubed ham, added some chili and put that on top of the pasta, then I made up a corn bread mix, grated in some cheese and spread that overtop of the beans mixture, then baked the whole thing for half an hour at 375. It actually turned out quite tasty. Now I have enough beans still left over for 2 more lunches - and bean casserole for 2 more servings. I'll be able to do something other than beans for Wednesday dinner - yay!

we had deviled chicken last night..

pan fry the chicken just until browned, throw it in a baking dish and then mix together some ketchup, mustard, Worcestershire sauce, brown sugar and a little water.. and pour that over the chicken.. bake the chicken covered for about 30 minutes.. remove cover and bake another 10 to 15 minutes or until chicken is cooked..

I was kind of half listening to the Robin Miller show on Food network yesterday - I may try this recipe, once I get my paws on the ingredients:

Chicken in Parmesan Chive Cream Sauce Recipe courtesy Robin Miller 2007

Show: Quick Fix Meals with Robin Miller

Episode: Fish and Fowl

1 tablespoon olive oil

1/2 cup shallots, diced

3 cloves garlic, minced

2 pounds boneless skinless chicken breasts, cut into 1-inch pieces

1 teaspoon dried thyme

2 bay leaves

1 1/2 cups heavy cream

1/4 cup Parmesan, grated

2 tablespoons chopped fresh chives

Salt

Freshly ground black pepper

1 cup rice, regular or instant, cooked according to package directions

Heat oil in a large skillet over medium-high heat. Add shallots and garlic and cook for 2 minutes stirring with a spoon. Add chicken and cook 3 to 5 minutes, until golden brown on all sides. Add thyme and bay leaves and cook for 1 minute, or until fragrant. Add heavy cream and bring to a simmer. Reduce heat to medium and simmer for 5 minutes, until chicken is cooked through. Add parmesan cheese and simmer for 1 minute or until sauce has thickened. Remove bay leaves and stir in chives. Season to taste with salt and freshly ground black pepper.

Spoon all but 1 heaping cup of chicken over rice. Reserve remaining chicken for Penne with Chicken, Wild Mushrooms and Peas, if desired.

4 tilapia or flounder fillets, about 5 ounces each

Salt

Freshly ground black pepper

2 tablespoons fresh lemon juice

2 teaspoons red chili paste

1 (11-ounce) can mandarin oranges, drained and chopped

1 tablespoon chopped fresh cilantro leaves

Heat enough olive oil, to shallow fry the fish, in a large skillet over medium-high heat

In a shallow dish, whisk together 1/2 cup of the flour, beer, egg, and baking powder. Place remaining 1/4 cup flour in a separate shallow dish.

Season both sides of fish fillets with salt and black pepper. Dredge fish in flour, turn to coat both sides and then shake off excess flour. Dunk fish in beer mixture and turn to coat both sides.

Add fish to hot oil and cook 2 to 3 minutes per side, until cooked through and opaque. Remove fish from oil. Place on a paper towel lined plate.

While the fish is frying, in a medium bowl, whisk together lemon juice and chili paste. Add mandarin oranges and cilantro and toss to combine. Serve sauce over fish.

today we are having Crockpot Sweet and Sour Pork.. one of our favourites... :thumbs:

4-6 pork shoulder steaks (i usually use about a pound or so of pork stew meat)

1 tablespoon cooking oil

1 can (15 ounce) crushed pineapple (I use about a 20 ounce can of pineapple tidbits with the juice)

1/2 cup chopped green bell pepper

1/2 cup water

1/3 cup brown sugar

2 tablespoons sugar

1 tablespoon quick-cooking tapioca*

3 teaspoons soy sauce

1/2 teaspoon dry mustard

In skillet brown pork in hot oil. Drain fat and transfer pork to crock pot. In a bowl combine the rest of the ingredients, including all the juice from the pineapple. Pour over pork in crock pot. Cover and cook on low for 8-10 hours or on high for 4-5 hours. Serve over rice.

*I have never used tapioca, I just use cornstarch which I add during the last hour or so of cooking time, just mix about 2 tablespoons or so of cornstarch with some cold water and mix into the crock pot..

oh and I usually don't add all the pineapple at the beginning just some and then add more to your liking when you add the cornstarch...

Now - this sounds good. We have everything except the beer . . . wonder what I could substitute . . .

Now - this sounds good. We have everything except the beer . . . wonder what I could substitute . .

If you have soda water or chicken stock you could substitute that or, if you have both, a combination of that. Or vegetable stock if you don't have chicken. If you only have beef broth I'd do one part broth to two parts water or soda water.

Right now I have tried everything this week food wise, and everything makes me go to the bathroom... I had eliminated all the dairy and still sick, so I had a little glass of skim milk on sunday to test, and it didn't change anything. I do eat some rice/pasta, so carbs ? gluten ? possibility I guess. My family doc is waiting for some results, and if by thursday I am not better I have an appointment scheduled with GI specialist.

OH, and I overcooked my rice, its mushy and I added too much water :lol:

I thought custard was fat and too sweet and had dairy in it :unsure: What's your recipe ?

You may have to do a full cleanse to get everything out of your system perhaps... i think it takes about a month to get all the leftovers out of your system.... i think that's how long a full cleanse takes (albeit your body has been "cleansing" for a full 12 days) :) tee hee.. but it does take awhile for those foods to leave your system.

Baked Custard

4 slightly beaten eggs

1/4 cup sugar (or less - or use Sweet and Low like I do)

2 cups scalded milk, sllightly cooled (I use skim milk)

1/2 tsp vanilla

sprinkle of nutmeg

Combine eggs, sugar and slowly stir in slightly cooled scalded milk and vanilla.

Pour into individual cups or into one quart size baking dish (I do the big dish).

Sprinkle nutmeg over top to dust;

Set baking dishes into a shallow pan of water and place in 350 degree F. pre-heated oven.

For individual cups bake approx 40 to 45 minutes

For quart baking dish bake approx 60 minutes

Custard is done when a toothpick inserted into the center comes out clean.

Serve either warm or chilled.

Yes, it contains dairy but you can lessen the fat by using skim milk. If this is too sweet you can reduce the sugar - I don't like it sweet either and generally reduce the sugar to less than 1/4 cup. If it isn't sweet enough you can always sprinkle more sweetner over top. The vanilla helps with the flavour

The first time they were good, but I only had brown rice, and I think that cabbage rolls need to be made with white rice only! (Even though it's not so good for me.) :P

We had take out tonight - there is a Caribbean restaurant that opened up just outside the entrance to our community. We ate there once before and really enjoyed it, so tonight phoned in our order and picked it up. I had goat curry with potatoes and carrots, red beans and rice, and a cooked cabbage type of slaw with roasted plantains. Joe had jerk chicken wings also with the red beans, rice, cooked cabbage type of slaw and roasted plantains. Yum, Yum! The food is excellent and the serving sizes were huge so we both have those left overs for lunch. (Still have two servings of beans from Saturday in the fridge too - will have to find something to do with them tomorrow night after all, I guess).

Yum!! I have never made cabbage rolls but I have done 'a lazy cabbage casserole'- all the same ingredients and baked in the oven. It tastes just as good and is less work. Doesn't look as pretty though.
