Timeline
We had grilled turkey burgers last night. I must have overdone the spices. I just threw in a bunch of "stuff", and I usually LOVE spicy stuff, and it's okay with me, however this time, something didn't agree with me. :wacko: I wasn't feeling well most of the night. Oh well...

Tonight, I have no clue what I"m going to make. Maybe a spinach loaf, or ham and cheese and corn on the cob.

Sorry you weren't feeling well Carla, hope your stomach has recovered today!

My Husband had to work until 9 last night and then one of his fellow workers decided to keep him chatting for an hour. My Husband said he did the twirling keys thing, then the open the car door and lean on it thing and then actually sat down in the car as in 'i am leaving now' and still the guy talked on and on :lol:

Anyway, I had a frozen pizza, which was really good :)

I am making honey baked chicken in the crock pot :P was simple enough.. just throw in the chicken then mix together some melted butter, honey, mustard and a little salt and throw that over the chicken.. i really hope I started it in time though.. I have a job interview at 6 tonight... :unsure:

Tonight I am going to attempt crab cakes. I have never made them- I got a recipe from Barefoot Contessa. I'll spruce it up my way though and see how it goes.

I'm off to get the stuff I need and get myself ready.

How did they turn out? I've made them a few times. Never knew Ina had a recipe for them...should have guessed though! If they were good, I'd love the recipe.

tried something different tonight - it seemed to work - did a tomato, mushroom artichoke heart, basil and cheese quiche with sliced tomatoes and cucumbers on the side.

Crab cakes were awesome!! Mel loved them and told all his coworkers and they want the recipe too. I didn't follow her recipe exactly- I read several of the reviews people had made about that recipe and made adjustments to suit. I will sit down tomorrow and re write it to what I did- and then post it. I served them with an avocado dressing from Paula Deens recipes (a suggestion from one of the reviews)

Tonight was a great dinner- another Ina recipe :) Tequila lime chicken. Mel made some fresh pico de gallo, I made guacamole. We also had some Uncle Bens spanish rice- those 90 second microwave pouches are awesome.

Friday night I made chicken using a spinach pesto I brought back from Europe..... it's the most amazingly delicious stuff. I also used it to flavour an Italian wedding soup I made for tomorrow night since my husband will be working late. (Used it in the meatballs too.) Last night my husband brought home chicken and ribs and collards from the BBQ down the street. Tonight we are having steak and mushrooms with a salad of cucumber, tomato, and peppers. I'll probably pick up a russet or sweet potato to go along with it.

2 tablespoons olive oil

3/4 cup small diced red onion (1 small onion)

1 1/2 cups small diced celery (4 stalks)

1/2 cup small diced red bell pepper (1 small pepper)

1/2 cup small diced yellow bell pepper (1 small pepper)

1/4 cup minced fresh flat-leaf parsley

1 tablespoon capers, drained

1/4 teaspoon hot pepper sauce (recommended: Tabasco)

1/2 teaspoon Worcestershire sauce

1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2 pound lump crabmeat, drained and picked to remove shells

1/2 cup plain dry bread crumbs

1/2 cup good mayonnaise

2 teaspoons Dijon mustard

2 extra-large eggs, lightly beaten for frying

4 tablespoons unsalted butter

1/4 cup olive oil

Place the 2 tablespoons butter, 2 tablespoons oil, onion, celery, red and yellow bell peppers, parsley, capers, hot pepper sauce, Worcestershire sauce, crab boil seasoning, salt, and pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature. In a large bowl, break the lump crabmeat into small pieces and toss with the bread crumbs, mayonnaise, mustard, and eggs. Add the cooked mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into bite-sized crab cakes.

Heat the butter and olive oil for frying over medium heat in a large saute pan. Add the crab cakes and fry for 4 to 5 minutes on each side, until browned. Drain on paper towels; keep them warm in a 250 degree oven and serve hot.

The few things I did different after reading the reviews- I used more crab, less veggies, less mayo, only 1 egg and a lot more bread crumbs. There were a few reviews that said the mix was too wet and not crabby enough. I bought capers but Mel said he wasn't fond of them so I didn't add any. I also spiced mine up a bit more- more Tabasco and some creole seasoning. I dipped them in more bread crumbs right before frying them- which gave them a nice crust.

We both really loved the avocado dressing with them- I mashed up 1 avocado, added a little mayo, some worchestershire, lemon juice, salt, pepper, and creole seasoning.

oh man, i had baked beans last night - talk about not a good thing to eat. I have IBS so I was up half the night.. every time I eat them the same thing happens.. you'd think I'd learn after a while.. But I LOVE beans on toast so!!!

oh man, i had baked beans last night - talk about not a good thing to eat. I have IBS so I was up half the night.. every time I eat them the same thing happens.. you'd think I'd learn after a while.. But I LOVE beans on toast so!!!

Oh my! I'm sorry...I'm trying not to laugh here, but I do know where you're coming from. I did want to mention that I was telling Gene about baked beans and buttered toast and I guess I was speaking passionately about the combo and I looked over, and he was looking at me with a very...blank expression? haha He said baked beans and buttered toast??? I said yes... :lol: I said, it's like toast and canned speghetti. He just shook his head. The strange things you Canadians eat!
