Okies, rare contribution. My beloved mamma in law (who is actually a lovely woman and dear friend) bought us some "fake chorizo" from Safeway. It's vegan, and I had almost thrown it away thinking it would taste like #######; but oh surprise, it is the yums. So, if y'all like spicy sausages [insert Mexican sarcasm here] but don't like meat, go get some of these babies. Good as grilled sausage; even better when crumbled and added to pizza or pasta sauce. :thumbs:

:lol::lol: That's funny. If you can't get the real stuff, why bother.

hmmm not sure exactly what dinner is going to be yet.. I am leaning towards italian chicken..

just throw some chicken (breast, thigh etc) and onion in a baking dish and then mix together some tomato sauce, italian dressing and oregano and throw that over the chicken, you can add zucchini if you want too and then you bake that in the oven till chicken is cooked and then you serve it over pasta.. oh and you can add Parmesan cheese to the chicken stuff after it is baked..

Hubby is working another 11a - 7p shift at the park. *sigh* He says just cook for me and Anna. She wanted tuna, I'm making a small green been casserole and maybe have some leftover steak. I'm really hoping this is the last of these weird schedules.

Today is one year since my husband arrived. :) I baked a pumkin cake w/ cream chese icing last night. (Yummy, not too sweet, not too moist...I'll post recipe too.) I'll 'decorate' it today, but here's a pic. Picture680.jpg

Pumkin Cake

2 cups sugar

1 1/2 cups oil

4 eggs

3 cups sifted flour

1 cup chopped nuts (I use 1/2 pecans-1/2 walnuts)

2 tsp baking soda

2 tsp salt

3 tsp cinnamon

2 tsp nutmeg

1/2 cup milk

1 can pumpkin

Combine sugar, oil & eggs; beat well. Sift dry ingredients and add to first mixture, continue mixing. Add milk, nuts and pumkin mixing well. Bake at 300 for one our in 4-9" pans.

Icing:

10 oz cream cheese

1 stick margarine

2 1/2 cups powdered (confectioner's) sugar

3 tsp vanilla

1 tsp cinnamon (optional)

Soften cream cheese and margarine, add vanilla & sugar, beat until blended.
