But tonight going old school, as my gran would say. Had a main meal for lunch so a simple corned beef, mustard and cheese s/w for dinner with some fruit.

have you had them before? they are really good.. usually eaten with sour cream or gravy.. yum..

UGH...stop with the pictures...they make me SO hungry!! I LOVE them with sour cream. I make my own when I have the time. Make about 10 doz. at a time. I haven't made them since I came to the US though. Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

Oh, and thanks for the goulash tips! :thumbs:

yeah I am not a big fan of cottage cheese either.. but you can put almost anything in them.. I prefer the ones that are filled with mashed potaotes and cheese..

I grew up with the cottage cheese ones, so they are my FAVORITE! But I can make do with the potato ones! Mmmm... I really think I need to try my hand at making them from scratch. I've made them with my Mom and Grandma several times, but never all by myself!

Gene came home from work very queasy and he was sick all evening, and all night. I didn't make up what I was going to. I'm not a big fan of fussing for myself, so I just had a bowl of cream of wheat, with brown sugar and milk. mmmmmmmmmm We'll see how he feels when he wakes up today, he's sleeping in as he didn't sleep much of the night. There is a flu bug going around his workplace..they call it the creepy-crawlys? ick! :hehe:

Blah! Well I hope Gene is feeling better today Carla.

We made stew for dinner last night - it was really good. Also had Pillsbury italian bread - it's the only Pillsbury thing I have purchased since living here is ze USA - because I don't really like their stuff generally - however - and again, I have only tried the one thing so far - it tastes good.

I found the rolls or whatever of theirs, purchased in Canada, always tasted like baking soda.

we were bad last night we ordered pizza from the deli down the street.... we never tried it before and we will never again :P it was ok and better then most places but the pepperoni was almost inedible... the crust was good though..

this is basic one.. haven't tried this recipe but it looks similar to the one I have used in the past... this is for a big batch.. you might want to half or quarter the recipe...

Pierogi (Or Perogy) Cheese and Potato Filling

SERVES 70 -80

* 8 medium potatoes (my favourite to use are Yukon Gold)

* 1 large onion, chopped

* 2 tablespoons butter

* 1-1 1/2 cup mild cheddar cheese, shredded

* salt

* pepper

1. Peel and cut up potatoes, boil until tender.

2. While potatoes are cooking, sauté onion in butter on medium heat until translucent and slightly browned.

3. Drain potatoes, slightly mash them, then add sautéed onions, mash slightly more.

4. Add cheese 1/2 cup a time and salt and pepper, mixing thoroughly while mashing potatoes.

5. Depending on your tastes, you may want to add more or less cheese, as well as salt and pepper.

6. You don't want to over-mash the potatoes, they are easier to work with when they are "roughly" mashed rather than whipped or creamy, although that may just be a preference among my family.

7. I usually can fill between 70 - 80 perogies with this recipes depending on size of perogies.

Pierogi Dough Recipe

43 pierogies (approx)

* 1 cup flour

* 3/4 cup cake flour

* 2 large eggs

* 3/4 teaspoon salt (can use 1 teaspoon)

* 1/4 cup water

* all-purpose flour (or as needed)

1. In a large bowl stir together both flours.

2. Make a well in the middle flour and add in the eggs, salt and water, then stir together with a fork without touching the flour.

3. Continue stirring gradually incorporating the flour into the well until a soft dough forms.

4. Transfer the dough to a lightly floured work surface, and knead for about 7-8 minutes until smooth and elastic (adding ONLY as much additional all purpose flour as needed to keep the dough from sticking, the dough will be soft!).

5. Place the dough into a shallow bowl or on a lightly floured plate and cover with plastic wrap for no less than 30 minutes up to 3 hours (you may refrigerate overnight but bring the dough to room temperature before using this is important or the dough will be tough!).

6. Roll out and cut into circles.

# Cut each round into 8 (3") circles (using a glass works well).

# Place about 2 tsp filling on each dough circle.

# Moisten outer edges with water and fold dough over to close.

# Seal edges by pressing gently with the back of a fork or pinching together with your fingers.

# In large pot, bring salted water to boil.

# Cook 12 pierogi at a time, reducing heat to a gentle boil; boil until pierogi float to the surface (about 5 minutes).

# Remove with a slotted spoon, drain on paper towel and transfer to serving dish.

# Repeat with remaining pierogi.

# At this point you can serve them warm, freeze them for later use or fry them in butter over medium heat, lightly browning both sides before serving.
