I just found this recipe on another site... it looks good.. they say you can use apple pie filling instead of cherry if you want..

Fastest Cake In The West!

2 cups all-purpose flour

1 & 1/2 cups white sugar

1 teaspoon salt

1 & 1/2 tsp. baking soda

1 teaspoon cinnamon

1 can cherry pie filling

2 beaten eggs

3/4 cup vegetable oil

1/2 cup chopped pecans/optional

Mix all ingredients and put in a 9 x 13 pan.

DO NOT GREASE the Pan!

Bake at 350' for approximately 35 minutes.

Very moist cake.

Serve with HUGE dollop of whipped cream!

I'm taking my neighbour out to lunch this afternoon as she was out of town yesterday and it was her birthday. We might try a new deli near by, or a grill also near by. Depending on what I have, I might not have room for supper! I'm going to put some country ribs in the crock pot however, and Gene can have them if I'm not hungry. Maybe I'll pull the pork and we can have pulled pork sandwiches tonight, and then leftovers tomorrow night. Don't know yet what I'll make to accompany it. Rice and red beans I'm thinking and maybe some mixed vegetables.

Last night we had chicken curry with brown basmati rice instead of salmon. I have some fresh corn in the fridge so I guess I should make something to go with that this evening. Maybe corn on the cob and burgers-sans-the-bun with portabello mushrooms and tomatoes and swiss cheese? :unsure:

not sure what dinner is going to be tonight yet...

the burgers were good last night.. they were just frozen burgers but I did them under the broiler (would have BBQ's them but our BBQ is out of propane or gas or whatever :P)

then I put some Ken's steakhouse Sweet Vidalia onion dressing on the bun along with some ketchup and mustard and then a slice of cheese, some lettuce and pickles... mm mm mm

and then for the corn on the cob.. I melted some butter and added some granulated onion and brown sugar.. and then brushed that on the cobs and sprinkled with salt and pepper and then wrapped them in foil and baked them in the oven... yum...

Tonight we will just have the good ole grilled cheese. It's hot and no one feels like cooking and we aren't all the hungry anyway :)

Can't beat that! Grilled cheese sandwiches is one of those can't go wrong type of suppers! Particularly when it's hot.

Well, my neighbour got back home from an overnight trip too late for lunch yesterday, so we're going to go out today. I had country pork ribs in the slow cooker yesterday, so we had pulled pork sandwiches on onion buns, potato salad and Bush's cooked beans. I've had a lot of beans and I like Bush's best. I pick them up when they're on sale as they are usually a bit more than the other brands.

I have NO idea what we're going to have tonight. There are plenty of leftovers from last night, but I gave Gene some of that for his lunch, so I'll have to think of something else. :wacko:

I was over to Costco last week, again with my neighbour since I don't have a card...and picked up some Salmon Burgers. Frozen. There was twelve burgers in this bag, for like 5.99 and they were excellent. :thumbs: Cook up on the grill with a nice char at 3 to 4 minutes per side.

Last night we had chicken parmigiana, baked potatoes with sour cream, stir-fried herbed zucchini (from the garden), seasoned pinto beans (because they are my husband's favourite) and a tomato and cucumber salad (also from the garden). It was our 4th anniversary so I wanted something nice. No idea what we are having tonight, but friends are treating me to lunch today for my birthday. We are going to Mellow Mushroom as I haven't been there yet and want to give it a try. Tomorrow, one of Joe's colleagues from work who is also a friend, is taking us out for dinner in honour of our anniversary and my birthday so it should be nice.

Costco, I was trying to think of where we should go shopping today, maybe it should be costco!! Then again, we have a freezer the size of double shoe box, so maybe costco isn't such a good idea just yet.

Last night we had pork chops, rice and stuffing. I bought some lawry's ginger sauce and put a dab on the pork chops, I couldn't really taste it but Mike said it was good (he's not a huge fan of pork chops anyway so anything added for flavor would probably make him happy).

We are lacking food here, so shopping is in order, will probably just make a quick trip to Albertsons :hehe:

That cake sounds good Marilyn, I might just give that a try - just need some vegetable oil, cinnamon and pie filling - might even try it with fresh cherries, I love cherries :thumbs:

Oooooo Mellow Mushroom! If I remember correctly they have excellent pizza! When I worked in downtown Athens, GA I had lots of places like this to choose from for lunch. Of course, Athens is a college town and some of those college kids are pretty good at making pizzas. Hope you have a great lunch and a wonderful dinner this weekend with your friends. :)

I made your easy mustard chicken a few nights ago- it was awesome. I mixed together yellow mustard, creole mustard and dijon. I added lots of creole spice and used italian whole grain bread crumbs that I found.
