Ok this has to do with lunch today, not dinner, but I need to be enlightened perhaps.

We went to a local (non-chain) restaurant for lunch. My Husband ordered a Monte Cristo. It came with icing sugar all over it, surely this is a Appleton's cafe anomaly and not how a Monte Cristo is made here!?

I have never seen a sandwich with icing sugar on it :blink:

Monte Cristo Sandwich

A great brunch item! One of my husbands favorite filling, baked, french toast style, sandwiches filled with cheese, ham, turkey & mustard. Raspberry preserves is a must for him. Could be eaten for breakfast, lunch or dinner. This is a LESSER FAT Monte Cristo recipe being baked and not fried full of flavor! I also like to buy the low salt cold cuts or use fresh baked turkey leftovers sliced thin.

35 min | 15 min prep | SERVES 4

8 slices bread (I use challah)

4 teaspoons honey dijon mustard

8 slices thin deli sliced swiss cheese

8 slices thin deli ham

8 slices thin deli sliced turkey (I like smoked)

3 large eggs

2 tablespoons flour

1 tablespoon melted butter

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons milk (low fat to try to keep it low in fat!)

powdered sugar, for dusting

raspberry preserves, for dipping

1. Heat oven to 425°F.

2. Lightly butter a baking sheet pan. I use the spray.

3. Spread 1/2 teaspoon mustard on each slice of bread.

4. Layer between mustard sides of two slices of bread, 1 slice cheese, 2 slices ham, 2 slices turkey, and another slice of cheese.

5. Repeat to make four sandwiches. Whisk eggs, flour, butter, salt and pepper in a shallow dish until smooth.

6. Blend in milk.

7. DIP both sides of sandwiches into egg mixture until bread is lightly soaked.

8. Place on baking sheet; drizzle any remaining egg mixture over top of sandwiches.

9. Bake 8-10 minutes until bottom is golden brown.

10. Turn with wide spatula and continue baking 8-10 minutes or until second side is golden brown.

11. Serve warm dusted with powdered sugar and dip or spread raspberry perserves on sandwiches.

12. Garnish with fresh raspberries.

pot roast, potatoes, carrots, onions tonight with some of the nice Artisan whole grain bread from Costco and a salad

2011 August 3 - Rec'd email that my case has been scheduled for Oath

2011 September 1 - Oath ceremony (rec'd snail mail Aug 5)

2011 September 1 - All done, yeah.

I am marinating some chicken drumsticks as we speak... I am just going to cook the chicken in the oven because our BBQ is out of gas...

the recipe was originally called El Pollo Loco chicken but it doesn't seem like it will be anything like their chicken so I changed the name to Crazy Chicken...

Crazy Chicken

3/4 cup Heinz Chili Sauce

1 lemon, juice of

1 large orange, juice of

2 tablespoons vegetable oil

2 tablespoons vinegar

2 teaspoons sugar

2 teaspoons garlic powder

1 teaspoon Worcestershire sauce

Tabasco sauce

4 boneless chicken breasts

1. For marinade, mix all ingredients, except chicken, together.

2. Add chicken and marinate for 4-24 hours.

3. Remove chicken from marinade; discard marinade.

4. Cook chicken on a hot grill for about 10 minutes on each side.

5. Serve with tortillas and salsa.

6. Time does not include marinating.

Darn i just realized I forgot the sugar... oops.... it should be ok though, the chili sauce is sweet...

My ultimate favourite sandwich is a Monte Cristo!! Served with icing sugar AND dipped in maple syrup. INCREDIBLE!!! I've not found a place here that will serve it that way OR will not look at me like an idiot when I ask about it, if it's on the menu. Several restaurants in Saskatoon make it that way!! It's how I had them as a youth as well in Ontario. Your posting put such a smile on my face! :lol::)

I made pecan pie today.. my first attempt ever... I think I might have overcooked it a little.. I checked on and it still looked too runny so I cooked it longer.... :unsure:

we will see what hubby says later when he tries it.....

Pecan Pie

1/2 cup margarine

2 cups light brown sugar, packed

3 eggs

1/4 teaspoon salt

1/2 teaspoon vanilla

1 1/2 cups pecans, chopped

1 9 inch pie shell

1. In a saucepan, melt margarine with brown sugar.

2. Add eggs, salt, and vanilla and mix well.

3. Add pecans.

4. Pour mixture into an unbaked pie shell.

5. Bake in preheated oven at 350 degrees for 45 minutes.

it actually was quite good.. a little crunchy on top but kind of gooey in the middle.. not bad for my first pecan pie...
