this is what i made for dinner last night...

Easy Enchilada Casserole Recipe

1 pound ground beef or turkey

1 small onion, chopped

2 cloves garlic, finely chopped

1 16-oz. Thick & Chunky Salsa

1 16-oz. can Refried Beans

1 10-oz. can Enchilada Sauce

1 2.25-oz. can sliced ripe olives

10 6-inch corn tortillas, sliced in half

2 cups shredded mild cheddar cheese, divided

Preheat oven to 375 degrees F.

Cook beef, onion and garlic in large skillet until beef is browned; drain. Stir in salsa, beans, enchilada sauce and olives. Bring to a boil. Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.

Layer half of corn tortillas on bottom of greased 13x9-inch baking dish. Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat layers. Bake, covered, for 20 minutes. Remove cover; bake for additional 5 minutes or until bubbly and cheese is melted. Garnish with green onions before serving, if desired.

*I have made this recipe twice already. I found it on the back of a grated cheese bag. I don't add the olives though, and I use ground beef instead of turkey and I layer it in a smaller pan, more layers of tortillas that way. Also per my husband's suggestion, we put some shredded lettuce and tomatoes on top (after it is baked of course) and served it with some sour cream.. mmm yummy!!

oh, have i posted this one before or did you find it somewhere else? ...lol

my hubby is Mexican and he loves this recipe.... i told him that it all tastes the same no matter if you roll them up separately or layer it in a pan..

i am going to have the leftovers for lunch today.. it doesn't taste quite the same as fresh but it is still pretty good...

I like doing simple recipes... I hate doing those big complicated recipes... :P

oh and I was trying out something new for hubby's lunch yesterday... I took a flour tortilla and spread it with some cream cheese and then put some deli meat, lettuce, grated cheese and a bit of salsa and then rolled it up.. hubby said he really liked it.. I made it again for him today but I think I put too much lettuce on it because it didn't want to roll up right :P...

I think I'm just going to make a Cobb salad. Or I might try the recipe I found on the back of a can called Arroz Con Gandules. That sounds kinda good. Hmmm. But I do have a bit of a craving for the Ma Po Tofu again. But that would entail going to the store for some tofu. bleh. I picked it up then put it back down yesterday. :angry:

I like trying the recipes on the back of products. I find that they usually turn out pretty good and are quite good.. I am assuming they probably try out the recipe to make sure it is good before they slap it on their product...
