Well, the Wednesday dinner picture night was a ROARING success, i'm happy to say. :)

seeing as Wednesday night is usually the day we eat out/get take out due to the schedule, I cannot participate. :(

And Trailmix - thanks for finding the pic of my dinner .... yeah, I don't seem to do much anymore except feed the bambino, change him, grab something quick for me, feed the bambino again, change him .... LOL!!!

And when daddy is holding him, I come here for some sanity!!!

Well, I didn't think about taking a picture of our picnic supper tonight...it was just sammiches and chips at a state park in the mountains, Black Rock State Park. Ham and turkey, homemade bread, swiss cheese, chips, drinks. The Eastern Continental Divide goes through Black Rock SP. Just as we were leaving, the fog began to settle in making an eerie atmosphere. Way cool!

Chicken Fajitas with Crunchy Lime Red Cabbage and Avocado.

No pics, alas.

I'm marinating the cabbage right now with lime juice, light olive oil, rice vinegar, agave syrup, lime zest, salt and pepper.

The chicken will be made with garlic, chili powder and red onion, and then I'll warm the tortillas, put in the chicken and top it with avocado and the lime cabbage.

I'm going to make a puff pastry spinach/feta/swiss cheese sandwich and I bought a container of Butternut Squash soup at Trader Joe's on the weekend. I've only ever had butternut squash soup once and it was SO good. I've thought about making it myself, but it slipped my mind, and then when I saw this, it reminded me of it. I'm going to go look for a recipe if this is good.

Golden Butternut Squash soup (Campbell's Select) is one of my Husbands very favorite soups, will be interested to know what you think of the Trader Joe's purchase!

Last night we had steak from Applebees - it was our 8th anniversary. We didn't actually go out, my Husband went and picked it up, it was very good :thumbs:

When I was home in April, we went to a special dinner honouring volunteers in Nova Scotia (my dad was one of the honourees - yay Dad!). The first course was this amazing squash soup in little ramekins, and the top of the ramekin was covered in puff pastry. It was seriously yummy -- the soup wasn't stringy (sometimes squash or pumpkin soup can be that way if it isn't pureed enough), it was perfectly seasoned (not too sweet), and the puff pastry kept it nice and piping hot. So good! :thumbs: One of these days I am going to make that for myself!

Tonight, if my husband gets home in time, I am going to gently persuade him ( :whistle: ) to make me his famous quesadillas with some leftover ground beef.

Wow, I didn't know Campbell's made one of those. I'll have to try it as well, and tell you which one was better. The Trader Joe's one was excellent, thick, creamy...I'd highly recommend it!

Congrats to your Dad Cassie! Mmmmmm it sounds lovely with the puff pastry on top. The Trader Joe's one was very nice! Creamy...not stringy. I would have preferred it more spicy myself, and there was a slight sweetness to it, but not too sweet. No sugar was added, it's very very natural, no additives, but some squashes are sweeter than others. I've never had pumpkin soup myself, but I might need to find a recipe for it and one for butternut squash one as well for the fall.
