Last night we went to Japanese Village for the Hibachi- it was awesome.

Tonight I am making roast beef poboys from the left over roast my mom made a few nights ago.

Yay for the corn festival!

We stopped at McDonald's on the way home last night, I had a McChicken, or the 'classic chicken sandwich' as it were. Nothing like a McChicken, the bun was sweet and the chicken wasn't crunchy - oh well.

I forgot to buy pastry to try Carla's spinach/cheese recipe, also forgot to buy a few other things so no matter, will need to go back to the store soon anyway!

Well, we finally got our incentive cheque on Friday and went out today to buy a barbeque grill we have had our eye on for the last 2 years. We keep saying when we extend our patio out back we will buy the grill, but we still have to extend the patio (ok, phoning this week to get quotes!), so, we decided to bite the bullet and bought the thing. What was extra nice is that it is $60 cheaper this year than last year! It is not listed as being sold in our store but they had 3 in stock, so we're happy. It is a pedestal style so doesn't take up lots of room, and while we won't be able to feed a huge party it will do enough burgers, steak or chicken for the smaller parties we are likely to have.

Ok, here's the recipe:

Cream Cheese Danish Thingy

(makes two rather large danish, easily enough to feed 12 people, 15-18 if you make the pieces really small)

Take one package of puff pastry (I like Pepperidge Farms, you find it in the freezer section and comes in two pieces) and thaw. Usually takes about 45 minutes.

Line a baking sheet with parchment paper (two baking sheets if you think both pastries won't fit) and unfold the puff pastry. Pepperidge Farms fold theirs in thirds, which helps -- the centre will be covered in the filling, the two sides will be cut and folded over. Press the seams together if needed.

Take a sharp knife and begin cutting the pastry into one inch strips, starting from the outside edge and stopping about 1/4 of an inch from the fold line, as if you were cutting fringe on a blanket. Do this on both sides, along the length, not the width.

Filling:

8 oz (one package) cream cheese *

1/2 cup sugar

2 egg yolks

2 tsp grated lemon peel or orange peel **

2 tsp vanilla extract

1 cup blueberries ***

Beat the cream cheese and sugar together until smooth. Add the egg yolks, citrus peel or juice, and vanilla; mix well.

Spoon the cream cheese mixture equally down the centre of the two pastries. It will be a generous amount! Sprinkle with fruit if you are adding some. Fold alternating strips over the filling (at an angle if possible) to give a "faux" braid effect. If you can pinch the ends and tuck under to seal them, go for it, I usually can't.

Bake in a 400 degrees F oven for about 20 minutes, or until the puff pastry has puffed up a bit and it is golden brown. Remove to a wire rack. Refrigerate leftovers.

For an added touch, make a glaze of 1/2 cup icing sugar and 2 teaspoons of whatever citrus juice you used in the filling. Drizzle over the danish while they are still warm. Serious YUM.

*I use fat free, and it tastes great

**I usually use a small splash of orange or lemon juice -- not too much or the filling will be too runny

*** you could use other fruit I guess that matches well with the citrus, or make a fruit sauce or chop finely and spoon over the danish as opposed to cooking it in the filling

This seriously is really simple to put together, but it looks like you spent serious time, you know? ;) If it doesn't make sense the way I wrote it here, let me know. Enjoy! :)
