Frances, why would you speak of your MIL that way? :unsure:

I was reading that and wondering "What's wrong with calling her a veggie?". I never realised that was an unknown slang word here...you learn something new every day!!

Plus, I agree that Indian veggie rules!! We had some this weekend...yumma yumma!!

A person in a vegetative state is sometimes, in a not so nice way, referred to as a "vegetable".

Well, it's not a term I made up.... and since that's what MIL calls herself... it doesn't bother me....but I know what you mean.

And Mand....we had an all veggie Indian curry last week.... saag paneer, veggie korma, a chickpeas and potato dish and garlic naan bread........OOOOOOOOOOOOOOOOH, yummity, yumm, yumm. And all three dishes were bought at three different places.....Whole Foods, World Market, and Trader Joes. :thumbs:

I live in Portland Oregon.. Lots of Vegan's here.. .. never really paid much attention to it until i realized I will need to learn... at least how to cook ..

Janak is vegetarian, will do cheese milk .. only egg rarely .. usually if sick..

I am slowly learning.. .

for a surprise I have started Jenny Craig.. and am using the Vegitarian menu from there... first week lost 4 lbs.. weigh in tomorrow hope for another good week .. Wish to suprise Jan when he makes it here.. Lots of vegitables that are free to eat.. all you can eat on broccoli and califlower and carrots and greens . .. bulk bulk.. does it for the pitt in my tummy..

Anyone out there that has helpful info and lessons.. on how to cook for Janak.. ? Christine.. I will pm you .. im sure you have had to learn for Sujeet. anyone else.. please help.. looking for ideas..and Im not a cook ha ha ha .. :help:

Ohh I have a tip for an Indian meal for those of you who have no clue how to make paneer, or are scared to try it(like me!)...

I don't know if you've heard it before but you can make ricotta cheese into paneer! It may not be 100% real paneer but it tastes very close. I made Palak Paneer last Wednesday night, my 2nd time using ricotta for paneer. I use whole milk or low fat milk ricotta; 15 ounce tub. (of course whole milk ricotta tastes BETTER! hehe).

The secret: spread it about 1/2 inch thick in a baking dish,& bake it in the over at 350 until it's firm and a little brown on top. When it cools, it can be cut into squares and added into the Indian recipe. It takes almost no effort! I learned after the first time I tried it, to make it firmer so it doesn't all crumble apart. After baking it, put the broiler on low for about 3-4 mins, just don't let it burn on top.

You can make any recipe that calls for paneer! :thumbs:

I started by just following recipes in Indian cookbooks :yes: Then after eating at an Indian restaurant, I'd compare how mine tasted when making it at home. I'd add in an extra pinch of spice here and there to make it seem right. Then also after Sujeet moved here I got to learn more and more from him, thankfully he is a good Indian food maker!

You need a few basics to cook Indian food. You can get them at an Indian/Pakistani grocer or online. Spices like Turmeric, Cumin seeds, Garam Masala, Butter Chicken Masala, Coriander powder, and more, are essential.

Satisfied vegan here...

#1- don't be afraid to experiment in the kitchen. Take non-veg recipes and substitute for the meat. There are a ton of sub's out there, but I find that the simplest are best. ie, we don't buy the expensive veggie-burgers, sausages etc, but just tofu and occasionally textured veg. protein. My wife makes a kick@ss OMELETTE for me by blending tofu and soymilk, and mixing with shredded carrots, garlic/onions, and a little flour and soy sauce. Fry it up. Serve with rice.

Eating out can be difficult, though less so if you eat dairy. While sub shops and taco bell can give you some limited choices, generally (but not always!) better places will be able to make you something. If you are suspicious of their sincerity, tell them you are alergic! Just a little fib, but you can be sure they won't want to risk the fish sauce! Indian is my favorite, as well as pita-places.
