My wife from Canada just activated her K3 VISA at a US point of entry in December of 2007. I am now looking to apply adjustment of status for her. I read over the guide and one of the requirements is copy of a valid I-94. We would like to start the AOS process asap right now, but she needs to go back to Canada to take care of some family matters in the mean time. Does this mean that US immigration would take the I-94 she obtained back in December since she is departing? She will be out of US for at least a couple months, how do we start the AOS application then with a valid I-94 form?

You file for AOS using the I-94 in her passport at that time. File before she leaves or after she returns with a new I-94. I would also make copies of the current I-94. She has to sign the I-485 anyway, so she'll be here when it is filed.
