My wife thinks that the letters from acquaintances (stating that they know you to be a legitamately married couple) that you submit with your I-751 application have to be notarized. I cannot find this requirement in any of the USCIS instructions that I have read. Can anyone confirm/deny this for me?

making it look easy since::::April, 2005::::

That's because the instructions don't list letters, they list sworn affidavits, which are notarized. Look at the example form: http://www.visajourney.com/examples/USCIS_I751_Affidavit.doc
