I love freshly grilled veggies. Those are one of my summer mainstays. Grilled eggplant is a favorite but that's about the only way I like it.

I really like most veggies:

particular favorites are asparagus, eggplant, mushrooms, zucchini, yellow squash, greens (collard, kale esp.). I miss the Southern veggies .... so not at all healthy for you, but dang were those greens good!!!

The only veggie that comes to mind as one I REALLY dislike is brussel sprouts ... and of course, whenever we visit Canada, my MIL serves that!!!

I like brussel sprouts. Only thing is that I have to be careful not to overcook them. Otherwise, they aren't that bad. I will eat most veggies though. Cucumbers I won't UNLESS they are in tzatziki. Mmm, I want some tzatziki now.
