eggplant! i'll be cooking some egplant this weekend :D

and i'll be taking a trip to barf city

eggplant is yummy. How do you make is Nessa?

this time I'll add tomato, it's the first time I'll try that way, I used to make like this below but without the tomato:

Nessa's Light Eggplant

Spray a cookie sheet with non-stick oil spray

- cut eggplant in thick round slices

- put 1 slice tomato on top of each eggplant slice

- season with oregano, salt, basil, pepper

- put on top slices of garlic

- sprinkle parmesan cheese (4tsp)

- bake 400F 20-30 min

eggplant: 1-1/4 lbs (19.3oz) - 132 cal

cheese: 4tsp - 40 cal

tomato: 26 cal

total = 198

i'll cook monday and u'll be working Monday, plus, a couple tsp of parmesan wont stink the house. what does stink is when I make pasta or those cheese balls with blue cheese or roquefort.

Nessa you should try marinating it in soy sauce & balsamic vinegar and then grilling it. SO YUM!

If I'm not too preocupied with my calories intake I could also cut in thin slices, season with the usual, salt, pepper, and use a tbsp of olive oil in a frying pan, add some garlic and then add the eggplant thin slices. yummy. :thumbs:

I have been doing really good today. Been drinking lots of water and eating what I am supposed to. Now if I could get a chance to excercise.

Well I did ####### this morning eating cold pizza for breakfast and what not BUT I had a 100 cal pack, a fiber one bar & a campbells soup at hand...I brought a south beach pizza but I'm feeling pretty satisfied right now so I won't eat it unless I start to get hungry

I should take my own advice when I say this: Don't be too hard on yourself if you slip up. Just continue the rest of your day by making healthy choices like you did and are continuing to do. That is something to be admired. Instead of being like "bleh I messed up so let me eat ####### the rest of the day cause it doesn't matter" (like I do all the time), you got over it. Good for you :thumbs:
