So I really enjoyed seeing all the recipes and chatter yesterday on here so I thought I would shoot for a second day. If you all are against this we can let the thread die but I thought it would be a nice Ramadan edition. So gals what's your menu for tonight?

I think I'm going to make some kind of beef dish although I haven't quite decided what yet. Also a question. My husband "broke" his fast last night with a date and piece of cake. (he has a ridiculous sweet tooth) and let me tell you I was starving that is not what I wanted to eat!! I wanted to chow down on my lamb but apparently that was to wait until later in the evening. I am for eating one large meal (that possibly just continues for awhile after Maghreb. What do you do?

Well I don't go to a mosque so I wait till maghrib time, eat three dates and some water, pray maghrib and then attach a funnel to my mouth and go to town!! :lol::lol::lol:

I'm going to make that greek soup tonight and I think we'll do our normal Friday night pizza as well. For dessert I have Cherry Garcia in the freezer waiting patiently for momma to come get him. :innocent:

Last night I made sambousas so we broke our fast with dates then ate the sambousas. We were full from those so we didn't eat an actual dinner. I'm glad we didn't eat more and make ourselves sick. Does anyone else notice that they don't gorge themselves when they have a fasting "partner"? When I fasted alone I ate way more.

Tonight I plan on making sorbat el ads (lentil soup) and chicken with onions and potatoes.

We had some friends over and broke fast with: dates, harira, bread, sausages, salami, cheese, hard-boiled eggs, lattes, shpekie, I guess a little bit of everything! Usually I'll make some sort of "main entree", but since my work schedule has changed and I don't get out until 6, it's gonna make that tougher. We pretty much just sit around talking and picking at what's on the table for a couple hours.

Wadi and I will eat something again before bed around midnight, usually just a snack of whatever we ate earlier.

Today Wadi bought a chicken from the market that's already spiced up and ready to go, so I'll just throw that in the oven when I get home from work. I can't wait to eat it!!!

I so want shpekia but we haven't found it here yet. Where did you get yours? I might drive to Boston to get some LOL

It's funny because the thought of it kind of sickens me the whole rest of the year because it is just soooooo sweet. But for some reason, at Ramdan, it just tastes so good! I think I ate three of them last night!

We're lucky that several of the markets around here have it. I would send you some, but I don't know how well they'd hold up in the post. What do you think? :unsure:

I'm going to hunt for them this weekend and if I don't find any here (come on there's like more than 20,000 Moroccans in teh DC area there has to be shpekia somewhere right?) then I might take you up on the offer.

Kefta Meatballs with Tomato & Egg is on the menu for tonight.

I dont go directly by this recipe, I add and subtract from amounts, cause it is hard to go wrong with these meatballs. You may not like as much garlic or onion, just suit it to your taste.

Ingredients:

*1 lb ground lamb or beef

* 2 garlic cloves minced

* 1 small onion minced

* 1/2 teaspoon allspice

* 1 tsp of cinnamon

* 1 teaspoon paprika

* chopped fresh parsley (or chopped fresh coriander)

* 1 egg

* Salt & freshly ground black pepper

* Olive oil for frying

* Tomato sauce (see recipe below)

(The recipe does not call for it, but I put breadcrumbs in this recipe. My MIL puts rice in her meatballs.)

Method:

1. In a mixing bowl, mix the meat, garlic, onion, spices, egg, Salt and pepper and the parsley until it is all thoroughly mixed, knead to a smooth mixture. Then wet your hands and roll into 24 walnut sized balls and set aside on a tray.

2. Heat the oil in a fry pan and cook the meatballs until golden brown, then place the meatballs in your tagine. (optional, I just use the same pan, since I dont have a tangine)

3. Pour the tomato sauce over the meatballs, simmer on the stove top for about 15-20 minutes, and stir so that it does not stick.

4. Break the eggs on to the sauce and cook until the eggs are just set.

5. Sprinkle with the chopped parsley (or coriander) and serve immediately.

Tomato Sauce

Ingredients:

* 400g canned tomatoes

* 1 onion finely chopped

* 2 garlic cloves minced

* 1 dessertspoon tomato paste

* 1 dessertspoon honey

* Salt & freshly ground black pepper

* Olive oil

Method:

1. Heat a little oil in a saucepan; add the onions and garlic then cook for about 5 minutes.

2. Add the tomatoes, tomato paste & honey then cook for about 10 minutes and season well

this is one of our favorite dishes!!! We have this usually once a week. I make it a tiny bit different, but almost the same.

ugh i wish i could be around more to join in all the posts!

well today is officially our first day! abdou decided to fast along with his family in morocco we began this morning.

i'm going to make moroccan bread (can't find it anywhere here!), baghrir, pepper/tomato salad, olives, and a lamb kidney tagine (his favorite *barf!!)

I think it would be easier for everyone if we just keep posting these recipes in the pinned thread. There are some really good recipes coming out and I would hate to have to keep searching for them. :star:

VJ Hours - I am available M-F from 10am - 5pm PST. I will occasionaly put in some OT for a fairly good poo slinging thread or a donut.

What i learned this ramadan is that you can buy shpekia here, but it sells out pretty quick. Yesterday we had none, because it all gone by noon! Themoroccan woman whois making them for the shop said if she has time on sunday she will make us a batch all for ourselves. YAY!

I think pretty much all over, the trick to finding it is to be at the right place at the right time

That's a good idea. We could discuss what we're cooking here and post the actual recipe up in the pinned thread.

I think it would be easier for everyone if we just keep posting these recipes in the pinned thread. There are some really good recipes coming out and I would hate to have to keep searching for them. :star:
