Does it matter which Tax Return form I file?

Hello.

I am doing the K-1 process and we are waiting on the NOA2. I was wondering if it matters which tax return form I file, as since he has to bring them with to his Visa Interview. Does USCIS require a certain one to be filed or does it not matter? I usually do 1040EZ.

You need to have the most current. If 2013 is not completed, then you should submit 2012.

I was not talking about the year btw. I was talking about which type of form I use. 1040A or 1040EZ? If either of those matters.

The USCIS is not the IRS. They do not dictate what type of forms you should use to do your taxes. You do your taxes according to the IRS regulations. If you are eligible to file the 1040EZ, then you can use that form.
