Possible to file from relative's country instead of the US?

Timeline

My fiance and me are scheduled to get married in India in July. She will be in India for a period of 2 month. She will have a month left in India after the marriage.

Is it possible to start the filing process while she is in India by submitting the documents at the US consulate/embassy?

If possible, are there any benefits in this other than saving that 1 month's processing time after which she would be back in the US from where she can anyway start the filing process.

Would appreciate your views.

Even in countries where Direct Consular Filing is available, there are residency requirements. You can't just be a visitor, you have to be a resident for a certain number of months. Tygrys is correct, she can mail the documents from anywhere, but they will be processed in the US, and she will need to appear in the US if she is called for a field office interview.

I'm a dual US/Hungarian citizen (both by birth; Hungarian citizenship verification TBA), and my husband is a dual British/Irish citizen (by treaty) from Northern Ireland. We are atheists.

15 May 2014: Received formal residency/work permission (GNIB card with Stamp 4, one year renewable) for the ROI

@speedwell, would she too have to appear for an interview? I thought only I would have to appear for the interview at the US consulate in India.

Normally she will not have to appear for an interview if you filed a standalone I-130. Sometimes people are called in though. It used to be that they only requested an interview if they had suspicions about the couple's legitimacy. Now they also interview what seems like a random sample and it may be for quality control reasons or some other unknown reason, but you'd better be ready and prepared if they ask the USC to come in.
