Here is the template I used for mine:

Date: <date letter issued>

Re: Employment verification for <insert your name here>

To Whom It May Concern:

This letter is to confirm that <your name> has been employed with <organization> since <date employment started>. <your name> is currently working with us as <your position>. His/her annual salary is <amount> as of fiscal year 2012.

Please feel free to contact us if your office should require further information.

Sincerely,

<signature of supervisor/boss>

<name of supervisor/boss>

<title of supervisor>

<name of organization>

If company letterhead doesn't include contact info, then you should include under name of organization that as well.

The letter goes with your Affidavit of Support(form I-864) packet.

I've read, and been told, that I need an employement letter for the NVC step when it happens. What exactly does the letter have to say?

Thanks

Here's the wiki about it: http://www.visajourney.com/wiki/index.php/Employment_Letter

Remember that the employment letter is optional. You do not have to send it as long as the beneficiary can send some pay stub which clearly indicates what he earns and who is he is employed to.

*Petitioner, not beneficiary :P

And yes, although the employment letter is optional, it's still a great proof of income to send in.

I think employment letter is very important. but i would like to add that when you get the employment letter, you should add on that your employer will continue to keep you as employee. this is very good to prove future earnings. while you can submit your pay stubs, but those won't indicate that if your employer intend to keep you as employee in the future, but if you can get a letter stating that your employer will keep you for as long as they can, then you will be in great shape.

I sent one employment letter, but it didnt say that they will continue to hire me... i will take another employment letter when i go with my wife for her interview and give them if needed.

I read an internal memo between NVC and USCIS, that said that NVC should consider what it said in the letter, and look for future references.
