Question about different spelling of Fiancee's name and how that relates to signature and passport

So, my fiance's last name is "Osaki". On her Japanese passport it is written as Oosaki (with 2 o). Now as I'm filling out the G325-A for her, should I list it as it is on her passport, or should I list it with only 1 "o" like it is everywhere else? Also, does this mean she has to sign her name with 2 o as well?

Passport name on the form, sign it as she usually signs her name. Not a big deal, they see these translation differences all the time.
