Take a deep breath, now slowww down. And handle one thing at a time, i hope you guys will be approved. Keep in mind once approved and she gets to the usa life will be very different she might miss home/family or feel depressed etc. Its something everyone goes through so prepare for that. And congrats on the baby

What if i was to get a new job after i sent my I-130 and G-325a forms in? I know you have to notify them if your address changes, but what if you change your job

There is no requirement to notify USCIS of a change in employment.
