Hi guys! I was looking at this link http://www.visajourney.com/content/k1guide and it says there that I would need to have a copy of the entire I-129f package. That's a lot!!! Do I really need it or should it be just the ones the prove our ongoing relationship (chat, pictures, phone records, etc)? Your responses would be very much appreciated. Thanks in advance!

It's for your own backup, and your fiance(e). I'd recommend having a copy to know exactly what's in there. This is only the beginning of loads of paperwork. Having a copy means you won't forget what you have provided, and you might need it one day. I used the info on the G-325A from the i-129f/K1 petition again recently. I can't really remember the dates I put on there so it came in handy when doing the Adjustment Of Status. I have a scanned copy of everything on a usb flash key since there's no point in printing everything out unless I need it for something.

If USCIS somehow looses something it'll be a walk in the park for you to find it.

EDIT: It is not a requirement to have copies of everything but recommended(especially on VJ). But if you have submitted copies of something then you're required to have the original(passport stamps, plane tickets etc.). :)
