Does an email count as a "document" that needs a translator's certification? I translated a few emails myself as proof of an ongoing relationship (I am fluent, but not certified, in spanish). Does it matter that much that the emails be certified? Will that cause problems?

You do not need to be certified to translate... you simply need to be competent in both languages and sign a certification as such

For the I-129F, e-mails not needed nor even wanted by the USCIS.

USCIS and the Embassy personnel all speak English. They may speak some local language but all documents must have English translations if you want them to count for something. If you are fluent, then you can do the translation. There is not official certification; it's an honor system.
