What happens if we decided to get married after filing our I-129F but getting the K-1 Visa? Does it make a difference to the USCIS?

No, but it will make a difference to the consulate... They will take exception to what you have done and NOT issue you a visa. Period. A fiance(e) visa REQUIRES the alien enter the USA as a fiance(e) NOT a spouse. The legal marriage MUST take place in the USA or one of its territories.

Timeline

If you get married before entry on a K1 visa, then a withdraw of the petition and new petition for CR1 would need to be done. This would start over the time waiting as it would be a new petition.
