I forgot to add that I also cooked H'miss. I love this stuff. Here is the recipe.

H'miss is an Algerian salad of roasted peppers, cooked tomatoes and olive oil.

Ingredients:

1 green, 1 yellow and 1 red bell peppers

3 tomatoes diced

olive oil, about 1\2 cup, less or more, your preference

salt

Roast the peppers in the oven at about 400 degrees until the skin can be easily peeled off. Mine are black in some places. Peel, seed and cut them in peices and set aside. Put diced tomatoes in a skillet WITH NO OIL. Add salt to taste. Cook tomatoes until they are mush. Add the peppers to the tomatoes just to heat them, Stir and remove from skillet into a bowl. Pour the olive oil over the tomatoe-pepper mix. Eat it like a dip using french bread, or any traditional breads. Enjoy, this is really good.

i LOVE this stuff..... i love it so much i OD'd on it the first week i was in Algeria... couldn't really touch it for the rest of my trip!! :lol: and my poor mother in law would put it on the table everynight because she knew i loved it... :) but i think it's about time i make some and try it again.... :D

also bourek. yummmmmmmmmm..... that'll have to go on my list of things to make. SOON. i'm so jealous of my husband every night when he tells me about the food his mom prepares for break fast...

Cook Time:45 Minutes

Ready In:1 Hour

Servings:12 good sized servings--you could easily get 24 out of this

if you cut it for 24

INGREDIENTS:

2 cups semolina flour (smead in Arabic) OR cream of wheat---instant,

quick, regular--any kind of cream of wheat--I think cream of wheat

works better.

1/3 teaspoon baking powder

1 cup white sugar

1 cup sweetened flaked coconut

1/4 cup butter, melted

1 cup plain yogurt

1/4 cup milk, or as needed

12 whole almonds

SYRUP

1 cup water

2 cups white sugar

1 tablespoon lemon juice

DIRECTIONS:

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13

inch baking dish.

In a large bowl, mix together the semolina flour or cream of wheat,

baking powder, 1 cup sugar, coconut and butter. Add the yogurt and

milk; mix until moistened but not runny or liquid. If you see that

it is too dry, add more milk. Spread into a greased 9x13 inch baking

dish, smoothing the top as much as possible. Decorate the top with

12 whole almonds--imagine one in the middle of each square you will

cut.

Bake for 40 to 45 minutes in the preheated oven, until golden brown.

While the basboosa is baking, combine the water, 2 cups of sugar and

lemon juice in a small saucepan. Bring to a boil, and cook for 5

minutes. Make sure it doesnt boil away--boil on med heat and watch

it.

When the basboosa has finished baking, pour the syrup over it as

evenly as possible. Place it back in the oven for about 5 minutes,

or until the syrup has been fully absorbed. Let rest for about 20

minutes before cutting into pieces and serving.

Common Egyptian spices and their english names

The mashi recipe I am going to attempt this weekend, with pictures. However, I'm going to use grape leaves instead of cabbage, so just delete everything that has to do with cabbage. The grape leaves don't need to be cooked before hand.

This is totally american I think but what the heck it's a one of my favs and I've been eating it for ishtar:

Stuffed Tomatoes:

2 huge tomatoes

1/8 cup flat leaf parsley chopped up

1/8 cup cilantro

1/2 cup grated fresh parmagiana or romano cheese

1 cup whole milk ricotta cheese

2 cloves garlic, minced

2 scallions, chopped

cut tomatoes in half and scoop and throw out the seeds, etc. so they're like big cups.

mix the remaining ingrediants and stuff into the tomato cups

drizzle extra virgin olive oil on top

bake at 450 for about 16 minutes

mange!!!
