I'm hoping to get my interview soon and I have submitted my P3 to the consulate. Thing is, my USC fiancee is moving into a new place as of Oct 1. All of our previous paperwork has her previous address (parents home) on it. Do I have to do anything? Do I have to notify anyone of this change. Side note, she doesn't intent to make this her primary residence until I get there.

Should not make any difference. You're in the consular stage now, so the information required almost exclusively concerns you. The only exceptions might be the "Intended address in the US" questions on the DS-160 and/or DS-230 (I don't know what Montreal specifically requires for K-1s). Her address on the I-134 shouldn't be an issue, especially since it presumably matches the I-129F.

Improved USCIS Form G-325A (Biographic Information)

Form field input font changed to allow entry of dates in the specified format and to provide more space for addresses and employment history. This is the 6/12/09 version of the form; the current version is 8/8/11, but previous versions are accepted per the USCIS forms page.
