So when I fill out my annual income, which is 125% of the poverty line for four people (there are two of us). Do I need to list other property like my car? I don't have stocks bonds, life insurance, or real estate, and I prefer not to list my bank accounts. For evidence I am listing my merit raise notification, my pay stubs, and my tax transcript. Is this enough?

No need to include asset info if you qualify on income. An employer letter is typically used (position held, length of employment, annual salary).

Yeah I tried to get an employer letter, but have gotten no response to my various emails to HR.

Don't worry about the employment letter - they are often not available (as you now know) - the consulate is aware of this - current and recent pay-stubs will work as well.
