Timeline

No, the visa cannot be converted.

If you marry, then you would file to adjust her status. She can't leave the country until the process is complete.

Also, I'd double check the part about the month to travel after her visa expires. The last thing you want is for her to go out of status, as it could potentially throw a major wrench into the works vis a vis adjusting status or filing for a fiance/spouse visa later.

Improved USCIS Form G-325A (Biographic Information)

Form field input font changed to allow entry of dates in the specified format and to provide more space for addresses and employment history. This is the 6/12/09 version of the form; the current version is 8/8/11, but previous versions are accepted per the USCIS forms page.

My concern is that her legal status ends on August 24th (aside from the month of travel) and we won't be getting married before August 24th, and probably not before September 23rd either ... so it sounds like the K1 is not an option?

Its an option. You just would have to file it and then she would go home and you would wait the 6 months or so to process it before she can come back and you can get married.
