For those VJers that spent their time waiting to get their EAD or SSN... Im sure some of you have spent time picking up new hobbies. Mine was cooking and trying out different recipes. I dont bake so if some of you have baking recipes you'd like to share, that would be great.

I cook a lot of asian food but my family really loves the beef spring rolls I make.

Beef spring roll - probably take 2 - 3 hours to make depending how fast you mix & roll.

1.2 lbs ground beef

1 cup - finely chopped carrots

1 cup - finely chopped onions

2 tbsp flour

1 beaten egg

salt & pepper

a few pieces of vermicelli noodle (10 pieces?)

spring roll wrappers (short) - you can use long wrappers but you will have to cut them in half after rolling.

1. boil water in pan and add vermicelli noodle. simmer for 5 minutes or until ready then drain

2. in a bowl, mix ground beef, carrots, onions, and egg with salt & pepper, and vermicelli noodle

3. Mix well. When ready scoop 1 tbsp of the mixture onto spring roll wrapper and roll tightly. you can seal the edges with water. repeat process

4. Dip ends in some flour

5. Deep fry in hot oil until golden brown. (I use paper towel to drain the oil from the spring rolls so its not oily)

* you can serve with sweet chili sauce or soy sauce or the potsticker sauce. You can always eat it w/o any sauce.

hehehe this is a nice match to the Zucchini Recipe thread and the What's For Dinner thread. Now that the zucchini has finished I can post other recipes here, hehehe.

Those beef spring rolls sound good and easy to make.

this is a super easy and yummy recipe.. my hubby loves them

Chocolate Chip Squares Recipe

* 1/2 cup butter or margarine

* 1/2 cup brown sugar, packed

* 1/4 cup white sugar

* 1 egg

* 1 teaspoon vanilla

* 1 cup flour

* 1/2 teaspoon baking soda

* 1/2 teaspoon salt

* 1 cup semi-sweet chocolate chips

* 1 cup walnuts *

1. In medium-size bowl,cream butter with brown sugar.

2. Add white sugar and cream again.

3. Add egg and vanilla and beat well.

4. Measure in flour, soda and salt.

5. Stir until well blended.

6. Add chips and walnuts stirring to combine.

7. Scrape into 9X9 inch pan.

8. Bake in 350*F oven for 25 to 30 minutes until set and a nice brown color.

9. When cool cut into squares.

* I like to use 1/2 cup coconut and 1/2 cup almonds.. or you could just use all almonds or all coconut.. or pecans etc...

this is another simple recipe... tastes just like a butter tart but way less work...

Butter tart slice

1/2 cup butter

2 tablespoons white sugar

1 1/2 cups flour

Cream butter and sugar. Blend in flour. Pat into a 9 by 9 inch pan. Bake for 5 minutes.

1 1/2 cups brown sugar

1/4 cup melted butter

2 eggs, beaten

1 tablespoon vinegar

1 teaspoon vanilla

1 cup raisins (optional)

Combine rest of ingredients. Pour over slightly cooked base. Bake until set at 350 degrees for about 30 minutes.

Oh god, all through out this process I've been cooking and baking. I steal most of my recipes off the Internet and in the past week have made the following (my dad and bro are getting fat now..):

lots of stir fry's and chinese food

homemade pizza's

grilled shrimp caprese (from the olivegarden.ca) - that one turned out really nice

shrimp asopao

lol when I find something to make tonight I'll post it for you all. I like cooking threads :)

mmmm. cookies.

if you like to bake brownies too... try and make peanut butter brownies. I put a layer of peanut butter in the middle and/or top...... and my mother in law likes to add marshmallows on top w/ peanut butter but the marshmallows sometimes turn out to be hard when they melt and i like my brownies soft and chewy.

this is one of my favourite desserts.. I got the recipe form my SIL

No Bake Cheesecake

1/2 cup melted margarine

2 1/4 cups graham crumbs

1/2 cup brown sugar

Mix above ingredients together and press into a 8 by 8 inch pan and refrigerate.

1 envelope Dream Whip

1 - 8 ounce package softened cream cheese

1/2 teaspoon vanilla

1 cup icing sugar

1 can pie filling (I like to use strawberry rhubarb but I can't seem to find that down here)

Prepare Dream Whip according to package directions. Add cream cheese, vanilla and icing sugar and beat until fluffy. Spread over refrigerated crust. Place back in the fridge and leave it there for about 4 hours or until set. Once set add pie filling on top and let set in fridge until serving time.

Double Dark Chocolate Cake Recipe

* 1 1/2 cups all-purpose flour

* 1 cup packed brown sugar

* 1/4 cup cocoa

* 1 teaspoon baking soda

* 1/4 teaspoon salt

* 1 cup water

* 6 tablespoons vegetable oil

* 1 tablespoon vinegar (I think I only use a teaspoon or two)

* 1 teaspoon vanilla

1. Preheat oven to 350 degrees F.

2. In an 8 inch square cake pan, stir flour, sugar, cocoa, baking soda and salt.

3. Make a well in the centre of the dry ingredients and add the water, oil, vinegar and vanilla.

4. Stir until smoothly combined.

5. Bake in oven for 30 to 35 minutes.

I like to frost it with P-nutty Chocolate Frosting but you could just use plain chocolate frosting if you want..

P-Nutty Chocolate Frosting - Cream together 2 tablespoons peanut butter and 1 tablespoon soft butter. Blend in 2 tablespoons of cocoa. And then gradually add about 1 cup or so of icing sugar alternately with 3 tablespoons of milk.

I just received this recipe and it looked so good that I had to share it. The idea is really novel too:-).

If you want cake but don't want to make a whole one here is the best recipe.

One mug is enough for 2 people or 3 if you are not a big chocolate fan. Or you

can have it all to yourself.

Chocolate Cake in a mug

If you prefer to use measuring cups 2 tbsp = 1/8 cup, 3 tbsp = 1/5 cup, 4 tbsp = 1/4 cup. But let me say, clean up is way too quick if you just use the tablespoon - all you have to clean up when you're done is just one tablespoon and a coffee mug! This is so easy anyone can do it.

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour

4 tablespoons sugar

2 tablespoons cocoa

1 egg

3 tablespoons milk

3 tablespoons oil

3 tablespoons chocolate chips (optional)

A small splash of vanilla extract

1 large coffee mug

Add dry ingredients to mug, and mix well.

Add the egg and mix thoroughly.

Pour in the milk and oil and mix well.

Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts.

The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.

EAT! (this can serve 2 if you want to feel slightly more virtuous).

And why is this the most dangerous cake recipe in the world ?

Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

haha! I had this forwarded to me a few months ago by my cousin. I forwarded it to my fiance, and we made it "together"... i.e. at the same time via webcam. lol It was fun.

My husband hates pasta salad, I made this pasta salad one night, its a recipie my mother in NS gave to me, that we ate all the time there when i was younger. He actually really liked it. It makes quite a bit of pasta salad and it will last 2-3 days if kept in the fridge. Its a pasta salad to be served chilled.

pasta salad recipie

3 medium sliced tomatoes sliced and diced

1- english cucumber diced you don't peel it

1-bunch of green onion diced

1- green pepper cored and diced

2 cups cooked macaroni drained

mix all the veggie in the cooked macaroni when the mac is cooled, can rinse with cold water to speed up cooling process, then add one large bottle of catalina salad dressing mix alltogether if you don't find it enough sauce use one large and one small bottle of catalina dressing.
