We lost our power last night, and it doesn't sound like it will be coming back on any time soon. From what I hear, our transformer was damaged in a fire. That gives us a good excuse to dine out I'm thinking. Perhaps the mexican restaurant down the street that we've always wanted to try out :star:

Any ideas on what I can make with chicken breast that's yummy and healthy? My recipes are getting kinda boring.

I used to make chicken boobs basted in a creamy dressing and bake them. Anything from Ranch to Caesar to Honey dijon (the PC stuff was great). You could use one of the lower fat versions too, I used to eat them that way on WW a lot.

375 for 30-40 minutes should do it I would think. Serve with or in a salad or on a bun or wrap with veggies

Fabulous idea!

I made my chicken boobs stuffed with goat cheese that I flavoured with lemon and herbs and sun dried tomatoes. To accompany it I am having whole wheat bowtie pasta with broccoli and carrots with a little bit of olive oil and pepper.

I felt so bad, I was hammering on my chicken and my neighbor was in her kitchen. The walls are paper thin here, she probably thought I was trying to kill something.

halibut is one of my favourite fish, it's white and yummy.

Whenever I cook fish I put it in foil with some veggies and leave it in the oven for 30min. My husband loves it. Then I use the juice from it for the rice.

My other neighbor, who's a head chef, thinks I should get out of business and start cooking :P

The foil made me think of this recipe which is good with chicken (but not calorie conscious because of the coconut milk!)

- Ingredients:

Spinach (or pretty much any and as many vegetables as you like)

Green onions

Just lay the spinach on the bottom, plus any other vegetables you like - chicken on top of that, a can of coconut milk, salt and pepper, then cook for around an hour at about 400, make sure you have the foil wrapped tightly. I say an hour, but this is one of those things you don't have to watch, you could always cook it at 350 for 4 hours!

One thing that is absolutely delicious to add is yams (or sweet potatoes), peeled.

Oh and if you like fish, you might like 'raw' fish - which isn't really raw - because the citrus cooks it:

Basically it's just sliced fish - lemon juice (about 1 lemon for 2 pieces of fish), green onions, diced tomatoes and coconut cream (milk).

You put it all in a bowl and let it sit for a few hours - 2-4, it's really pretty good - very 'fresh' tasting.

All these yummy recipes - if I hadn't already eaten I would be drooling!

I made chicken pot pie with all the vegetables from the garden, left over chicken from last night and a can of corn. I made the top crust by using the buttermilk biscuits that you can buy as dough and then just bake on your own. It was very good and we have left overs for tomorrow.

While I don't think anyone will be running out to make raw fish, I should have said 2-4 hours - in the fridge :hehe:
