We are having shrimp creole, rice and artichokes.

yummy :)

We had pork chops with gorgonzola scalloped potatoes and roasted beets with beet leaves last night. I made a beans and greens soup with the rest of the beet leaves (cannellini beans, chicken, and veg) so we'll have that tonight.

yummmy again, :star:

It's so hard not to fall in love with those things. They're so sexy! lol

I don't have a freaking clue what we will have for dinner this evening. I have a fridge load of fresh fruit and veg that I have to get rid of as I am basically away from home for a month starting next Wednesday. I guess tonight's going to be a honking big salad.

Well, I've had a fun weekend. My fridge went caput on Friday. Woke up to everything happily defrosting in the freezer. Luckily, we were able to get someone out that evening. We had to empty everything out and unplug it, then put towels everywhere to soak up all the water. This was due to about 5 inches of frost which had accumulated in the back due to a part failure. He said these fridges are very well known for it. They have since fixed that problem so I guess that's good news with this new part he'll pick up and install Monday or Tuesday. In the meantime, I had a lot of cooking to do to try to save some of the meat. Mostly everything I had in there is now in the garbage, though. :( On the bright side, we now have a really good cooler which we had to buy to augment the two small existing coolers we had. lol. My other concern is that we are set to go away on Wednesday, so I'm really concerned that this gets done before we go. So, yeah. I spent a good deal of stressful time mopping up ####### and throwing stuff away. Needless to say, we ate out last night. <_< And I honestly have no motivation to make dinner this evening. :( I guess I'm still ticked off because I'm still throwing stuff away and cleaning. I've done two loads of laundry just to get the wet towels cleaned so they don't start stinking. This fridge has now sealed its destiny as a bar fridge.

Well I'm at a loss on what to make for supper, I figure if I get started soon I can actually make something decent and not have to get the kids to finish what I started. Good thing they can cook. So what is everyone else doing for supper so I can get some ideas.

Invest in a slow cooker! I cut my veggies and meat the night before. In the morning, I toss everything in the slow cooker with broth and I forget about it. First thing I know, my husband is home from work and the house smells like I've been cooking for hours!
