Bruschetta chicken - chicken breasts marinated in a balsamic vinaigrette and then grilled, topped with bruschetta topping and shredded parmesan cheese. Also had steamed veggies and stuffing (because I was out of the rice I wanted to make). My mom is visiting and making cabbage rolls tomorrow and I am super excited for them!!!

Oh em gee! It was absolutely deeelicious!

My husband loves franks red hot sauce and misses buffalo wings but he said that this really does hit the spot if you're a vegetarian. If you're not you could add the chicken the recipe calls for and I bet it's just as good... maybe even better. :D

I'm not a vegetarian, but the missus is. Good to know; that might be an interesting dinner option at some point. :)

dinners have been interesting these past few weeks.. I have tried to cook a good meal at least a few times a week..

today I bought one of those pre-roasted chickens and then I made a packet of taco rice and steamed some veggies... it was a pretty good dinner..

so like I mentioned in my lsat post dinners have been a challenge these last few weeks. mostly because I am almost afraid of eating because I don't want to get sick.. :P

anywho, today I am marinating some chicken breasts in a citrus marinade and then I am going to grill them on the George Foreman grill... I will serve it with some steamed veggies and maybe rice or something...

We went to an Irish pub today and I had a "french dip" -- roast beef sandwhich and this yummy dipping sauce. I have been limiting carbs in my diet to lose weight, but I totally lost it today as I didn't eat until last night. Made omelettes tonight - had some left over kielbossa so chopped that up, added chopped broccoli, green onions, mushrooms and diced mild green chili peppers. I added vegetable flakes to the eggs and let them 'soak' in, then used a small piece of old cheddar and a small piece of Colby cheese and grated them together and cooked them into the egg mixture before adding the 'insides'. I seasoned them all with Mrs. Dash's Table blend and served them with sides of sliced cucumber and artisan bread. It was yummy:)!

Yummy homecooked mama's style baked macaroni... fried onions, mushrooms and thick smoked bacon with 2 tbsp of philly garlic and herb cream cheese, mix that together with macaroni (al dente) add a cup of milk with 2 eggs cracked into it over the top, pile high with cheese, and back for 40 min...

Dont forget the glass of red wine with it :)
