this is what I made today.. it is baking in the oven at the moment and it looks yummy!

Cornbread Chicken Pot Pie Recipe

SERVES 4

* 1 (10 3/4 ounce) can cream of chicken soup or 98% fat-free cream of chicken soup

* 1 (8 ounce) can whole kernel corn, drained

* 2 cups cubed cooked chicken or cooked turkey

* 1 (8 1/2 ounce) package corn muffin mix

* 3/4 cup milk

* 1 egg

1. Preheat oven to 400 degrees.

2. In 9-inch pie plate mix soup, corn, and chicken.

3. In a separate bowl, combine corn muffin mix, milk, and egg.

4. Pour over chicken mixture.

5. Bake for 30 minutes or until golden.

**I did make some adjustments. I boiled up some diced carrot and potato and added that with some frozen peas to the corn, soup and chicken mixture, I also added about half a can of milk. Then I added some salt, pepper and a dash of paprika. Also I have never found a cornbread mix I really like so I make my own cornbread. I bought a container of cornmeal and the recipe is on the side.

My husband took me to Red Robin for lunch!

I've been wanting to go there since I got here, I love the chicken bruchetta burger so much and we had a coupon for a free appetizer!

So good.

Had spaghetti for dinner.

so for my dinner today I am probably going to have the leftover cornbread chicken pot pie... hubby is having that for is lunch at work too... and for his dinner maybe tuna sandwiches or something...

My husband took me to Red Robin for lunch!

I've been wanting to go there since I got here, I love the chicken bruchetta burger so much and we had a coupon for a free appetizer!

I signed up for the Denny's one last Tuesday, so I'll get a free grandslam on my birthday too!

I think we're just having dumplings from the freezer again.

i signed up for a lot of restaurant clubs :lol:

Soupplantation.. you get 2 for 1 coupons every few weeks, Coldstone Creamery, you get a free ice cream on your birthday

i also signed up for Applebees and TGI Fridays but I can't remember if you get free stuff on your Birthday or not...

Making garlic bread and spaghetti tonight.

Last night's falafel was a fail. I kind of knew that was going to happen... I only had canned chickpeas on hand. I'll try again next weekend.
