If you have a co-sponsor, then the petitioners income at the moment is not that critical, but he will have to fill out the affidavit for themselves.

They would list their current income, with the unemployment, and provide evidence of such.

Of course, the use of a co-sponsor depends on the embassy you are working with, some do not allow that.

My Advice is usually based on "Worst Case Scenario" and what is written in the rules/laws/instructions. That is the way I roll... -Protect your Status - file before your I-94 expires.

Number 7 - he would put in "unemployed" and his home address for location. He would also list his current income in that section. For evidence, he can include the receipts of the checks, or deposit information from his bank.

But since you have a co-sponsor, it would not be needed to show income, since you are not using income to support the benificiary, the co-sponsor is doing it.

Then if they accept co-sponsors, you are good to go.

The point is: the petitioner (your fiance, my husband) needs always submit an affidavit, as he/she is always the main sponsor. Don't waste much time trying to make sense of the rules hermana, they svck. Just make sure you follow them to the "T".
