Hi.

Does anybody know what Fromage Frais is called in the US, or something that is similar. I'm looking to make a tomato soup (got a lot of tomatoes from the garden this year) and the recipe I have calls for Fromage Frais.

Hmm...I would just use any non flavoured soft cream cheese as a sub.

Dont know that one, but you can sub it for natural greek yoghurt (hope I spelt it right) or sour cream

did find this on google for you, where it gives the american equivalents

Crème fraîche and sour cream are both manufactured cream products. Crème fraîche is a slightly tangy, slightly nutty, thickened cream. Before the age of pasteurization crème fraîche made itself as the bacteria present in the cream fermented and thickened it naturally. It is widely available in Europe, but much less so in the US, where almost all cream is pasteurized, and therefore has to be fermented artificially.

Timeline

Neufchatel cheese is more of a consistency of cream cheese, but I think it melts much nicer. We make a nice cheese sauce out of it using that and chicken broth.
