When I cook artichokes, I steam them in a pot with a little water, I also add a little olive oil and garlic powder. As for cooking time, I honestly don't know ... I just check them until they are done (I check the leaves and see how they are).

last night we had barbequed hotdogs...

tonight we are having sgetti... of course I cheat and use a jarred sauce but it is a yummy sauce... I just fry up some ground beef and onions and bell peppers if I have them and then add the sauce....

Just made this tonight...YUM! Made it with a big side of salad...

Curried Tilapia with Mango Salsa

INGREDIENTS

1 mango - peeled and diced

1/4 cup chopped red onion

1 serrano chile, minced

1/2 cup cilantro leaves, chopped

2 tablespoons lime juice

1/2 teaspoon salt

2 tablespoons olive oil, divided

1 tablespoon curry powder

1 tablespoon garlic pepper seasoning

4 fresh tilapia fillets

DIRECTIONS

For the mango salsa, combine the mango, red onion, serrano chile, cilantro, lime juice and salt in a glass bowl. Set aside.

For the tilapia rub, mix together 1 tablespoon of olive oil, curry powder and garlic pepper in a small bowl. Rub this mixture onto both sides of the fish fillets.

Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the fish for about 3 minutes on each side or until it flakes easily with a fork.

Serve with the mango salsa.

Tonight we are having salad and broiled chicken breast.

Last night we went out for burgers. I had a really long day with a crisis client at the end and decided I COULD NOT EAT ANY MORE BAKED ZITI (we have been eating that ALL week). Hubby took the rest for lunch today :)

I love Marie Callendars alfredo TV dinners. And most times I'm in LA, I try and go to the restruant on Wilshire Blvd. Though haven't done that the last bunch of times. The chicken alfredo is my favorite I think. Oh pizza tonight for us since it's Friday and I go on cooking strike for the weekend as I do every weekend (and resume back on Monday)...

that is kind of like me... I don't usually cook or want to cook on the weekends...

before I moved here my hubby and I kind of made a deal that I would cook on the weekdays and he would be responsible for the weekends.. of course he seems to have forgotten that deal was ever made :P

Not sure if this is in your area, Autumn, but maybe you can do a search.... Applegate Farms does a nitrate free bacon and sausage and I hear they are available in Super Walmart. (Will check the one down here and see.) I buy the Oscar Mayer nitrate/nitrite free bacon in Publix, and I hear it's also available in Safeway. We really like it. :thumbs: (I know that doesn't help with your sausage search right now. lol. But I'm heading over to Publix and Walmart this afternoon so I'll check for a nitrate free sausage.)

Oooh thanks, I will have to check that out. I will also see if I can get nitrate free bacon too. I have not seen it yet in the one grocery store in my town (ugh for monopolies), but I may be able to ask them to order it.

We are going out tonight for Italian food, not sure what I will have, but something yummy I'm sure!

We are just leaving to pick up a friend of ours who is coming in from Nebraska (needed a mid-winter break - lives on a cattle ranch there in the middle of nowhere) so we will be heading out for dinner afterwards at a little family cafe in the area. They have a great variety of 'American', Mexican and 'Greek' food on the menu and it is always good! Tomorrow we are going out for dinner too, to one of my favourite restaurants in Atlanta - Cedars of Lebanon - wonderful Lebanese food! Yum!
