Tortilla Soup

Ingredients:

16 - 18 ounces chicken broth (vegetable for

vegetarian)

1 cup cooked, shredded chicken (omit for

vegetarian)

1/2 cup tomato sauce

1/2 cup refried pinto beans

1/2 cup chopped carrots (1 medium)

1/2 cup chopped red bell pepper

1/3 cup chopped white onion

1/2 jalapeño pepper seeded, chopped

(optional)

1/3 cup chopped cilantro

1 green onion (aka spring onion) diced and

divided

1/4 - 1/2 tsp. garlic powder

1/4 - 1/2 tsp. cumin

fresh lime juice (about 3/4 of one whole lime)

sea salt

fresh black pepper

Toppings for Tortilla Soup:

tortilla chips

diced tomato

avocado

sour cream

Directions:

1. Chop: Carrots, red bell pepper and jalapeño into fat matchsticks. Dice onion and

green onion. Separate the dark green top of the green onion from the pale green/white

bottom. Roughly chop cilantro.

2. Shred: Cooked chicken into bite-sized chunks.

3. Get cooking: Heat 1 tsp. olive oil in pot. Add carrots, bell pepper, onion, jalapeño and

green onion tops. Sweat the vegetables over medium heat and add a pinch of sea salt

and a few cracks of fresh pepper. About 5 minutes. Add about 4 ounces of broth and

bring back up to temperature. Stir in garlic powder and cumin. Allow to simmer 5 - 10

minutes.

4. Stir in tomato sauce. Stir in beans and bring back to temperature.

Speaking of grilled cheese, we pretty much always use Havarti for them now.

So last night I made stir fry, haven't had it for a while and it was pretty good.

Tonight I would like to make stew, but all we have for steak is 2 ribeyes and 1 other tiny piece of steak. Don't really want to use the ribeye for stew so it may well be mostly vegetables - orrrr I could make pizza, which would probably be a much better idea.

That soup looks really good Marilyn.

Is it really the refried beans in a can? they're all kind of mushy (yummy, but mushy) - I would have thought another type of whole bean, but let me know how it turns out

Only 1/2 a cup, should give it some nice body.

Well i'm just about to get the stew going, made some small round bread loaves to use as bowls - should be good!

Went out for Thai food tonight. Hubby had the massamun curry with shrimp and avocado and I had shrimp with mixed veggies. I am doing Weight Watchers and shrimp with veggies is fairly low in points, whereas the massamun curry is ungodly .... I LOVE massamun curry, but was so proud of myself that I only had a teeny bite of hubby's :)

Wow. I figured this thread would be 262 pages of this:

That looks delicious! I'll be the first to admit that I can eat a whole box (well, I used to anyway) at one sitting. Lazy me, I'd make myself a pot of it, not according to the directions of course. I used butter, and no milk. I'd then take a soup spoon and eat it straight from the pot. Ugh. Probably why I have type 2 diabetes now!

Last night we had speghetti with homemade marinara sauce and turkey meatballs. Tonight we'll have it heated up again. It's always the best the second time around! :hehe:
