Tonight was McDonalds. My stepson got a $5 gift card from his grandma- I rarely let him have McD's.

I knew I would feel like ####### if I ate it but I did it anyways.

So here goes...tonight we're having Creamed Spinach like my Momma taught me, eggs over-easy and turkey sausage.

Momma's Creamed Spinach

2 bunches of fresh spinach

5-6 garlic cloves

1 generous tablespoon of all purpose flour

oil (I usually use canola)

milk

salt and pepper to taste

Wash spinach, put in pot and add water to almost cover spinach. Bring spinach to boil, reduce heat to medium and boil until tender (3-5 minutes). Drain well and then chop (a wooden knive works best) spinach on a cutting board. Peel and finely chop garlic cloves. In a separate pot heat a little oil to medium high, add chopped garlic...wait 1/2 minute (do not let garlic brown) and add the flour then spinach, stirring all the while, next add the milk and keep stirring until you see that there is a creamy consistency to the spinach. Salt n pepper to taste.

Usually we had this w/ 2 eggs over easy and no meat....but my hubby's a meat eater, so I've browned a little turkey sausage to go along w/ it. :)

Yes, I first get the water boiling in some smoked turkey and let them cook for a while maybe 30 mins. I even add a few of the chicken knorr cubes for extra flavor. Cook the greens for another hour, add some vegetable oil, most will add only salt but I like to add some sugar to the greens also, let them cook until the smoke turkey comes off the bone. Then you have some good southern home cooked greens. I always make them for Christmas dinner and everyone just love them. ;)

Thanks Forchika! I usually get them from the BBQ guy down the street. His wife makes some amazing collards, but I'm still trying to figure out the recipe. Hers have a bit of a bite to them so I've been able to determine that there are jalapenos in there because I've dissected them. We like the kick of the jalapenos so I'm going to incorporate that in my next attempt.

Isn't that weird? I always feel that way after eating McDonald's too. And so do a few other people I know. I wonder what it is? I honestly can't recall the last time I've eaten there. No wait.... yes I can. I stopped at one in PA on my drive to Canada last summer. I had a Happy Meal.... cause I was happy. :star:

Struck the mother load last night!! Live in a Condo and the lady downstairs is a great neighbor! Walks my dog if I'm away for too long, etc etc! She knows my wife is away, and last night due the icey roads, her company cancelled! So knock knock on my door, there she is standing with a plate of food for me!! Meatloaf and potatoes! yummy!!

Canadians Visiting the USA while undergoing the visa process, my free advice:

1) Always tell the TRUTH. never lie to the POE officer

2) Be confident in ur replies

3) keep ur response short and to the point, don't tell ur life story!!

4) look the POE officer in the eye when speaking to them. They are looking for people lieing and have been trained to find them!

5) Pack light! No job resumes with you

6) Bring ties to Canada (letter from employer when ur expected back at work, lease, etc etc)

7) Always be polite, being rude isn't going to get ya anywhere, and could make things worse!!

8) Have a plan in case u do get denied (be polite) It wont harm ur visa application if ur denied, that is if ur polite and didn't lie! Refer to #1

forgot to say that Im also making up a batch of "Cracker Candy" to take to work... have been off since Sunday to be home with (and go back and forth to the vet) with my furbaby..so taking some goodies tomorrow to work to say thanks for being so understanding and concerned while Ive been off

Im sure you all know what Cracker Candy is, if not heres the recipe...its always a hit and no one ever guesses its made of saltine crackers..

Cracker Candy

saltine crackers (38 to 44) depends on size of cookie sheet

2 sticks of butter (1 cup)

1/2 cup of sugar

1 12oz bag chocolate chips

preheat oven to 350...lay tin foil on cookie sheet...place crackers on cookie sheet ,enough to cover the entire sheet...boil sugar and butter together for 3 minutes...pour over crackers....put in oven for 10 minutes....pour bag of chocolate chips on crackers...as it melts spread chips over crackers...add nuts if desired...refrigerate for 2 to 3 hours, break into pieces.

I've never heard of cracker candy.

Nice score on the motherlode Flames!

Our pizza and salad last night was really good. Tonight, hmm, not sure what to make. I'm thinking Veggie Burgers and home fries.

I totally miss CDN "Chinese" food.. it doesn't even LOOK the same to me..

I ordered spareribs the other night and they had a yuky red sauce on them.. I like me ribs with a chocolate brown colored sauce.. I'm a visual eater, so it was pretty hard for me to eat what didn't LOOK like spareribs to me. :)

left over roast chicken, potatoes and carrots with a tossed salad - pretty tame but good food for a cold and windy night.

“...Isn't it splendid to think of all the things there are to find out about? It just makes me feel glad to be alive--it's such an interesting world. It wouldn't be half so interesting if we knew all about everything, would it? There'd be no scope for imagination then, would there?”
