yummmm, homemade bread! Sounds wonderful, Karen!

Tonight is kind of a hodge podge - potatoe salad, meatballs, corn on the cob and stirfried garden fresh zucchini, eggplant, peppers and tomatoes (fresh from our garden, that is!). Chocolate cake for dessert.

*groans* Chocolate Lava Cakes...with raspberries and whipped cream.....ooooooooo! Recipe!!!

I used a pre-packaged mix I found at the Fresh Market. It's called The King's Cupboard Rich & Dreamy Molten Chocolate Cake Mix. I had some frozen raspberries so I sprinkled them with sugar to bring out their juices and put that on top. Then I whipped some cream and added that as well. It was fabulous. :luv:

It's raining here too! That's why we're having soup. lol

hot as can be here.. I really don't feel like cooking at all but we ate out too much in the last week so I should cook :P

Well we had the pasta last night, quite good. The previous night I opened the vegetable drawer to reveal vegetables I had forgotten about, so we had corn, artichoke, squash and would have had steak and asparagus too except:

1. I didn't realize the bag I took out with steak in it only had 1 small steak! (so had chicken bites instead).

2. The asparagus had gone off after only a few days, that is like the second time I have had to throw the asparagus out.

Shepherd's pie tonight I think :thumbs:

tonight is BBQ chicken again... I might make pizzas....

last night hubby told me that I didn't have to anything fancy with the meat.. he said just give me the chicken and some tortillas and I am set... so that is what he got... I had the same but I added some sour cream and lettuce and cheese to mine...

Well, the vegetables are starting to come in with the garden! Yum! Tonight I did a crab quiche with fresh eggplant, zucchini, red peppers and chives from the garden and had a side of fresh corn on the cob with more chocolate cake for dessert. We will have our first tomatoes and cucumbers tomorrow along with more green beans.

Mmmmmmmmmm Kathyrn! That sounds delicious. Did you use canned crab meat or fresh lump crab? Did you fry up your eggplant and zucchini before you put it in the quiche? How small did you cut up your eggplant?

We're having sausage squares and a tossed salad for supper tonight.

I made a rhubarb/strawberry pie yesterday that was delicious. I got the rhubarb from my MIL. Can't grow it here...it's too hot.

Well, my husband decided he wanted to go suit shopping last night but I didn't feel like going with him post-21394-1213791076.gif so I stayed home and had baked beans. He came home with Japanese takeout. I think mine was better. :P

Tonight.... I don't know. Maybe salmon, garlic herb rice, and asparagus with hollandaise.

i have been watching and trying some of your recipes here and all sound so good so how about a okie special you can try. Seems there isnt much Mexican you guys try so how about this one i got off the radio this morning few of us are GOING to try havent yet

Okie's Beefy Fiesta Cheesecake

6/18/2008

Serves 8

Pam Spray

1 Packages Cream Cheese softened

1/2 Cup Sour Cream

1 Pkg. Taco Seasoning (Williams brand used)

2 Eggs

5 Corn tortilia's

1 Cup grated sharp cheddar cheese

2 Cups cooked shredded beef ( Can use precooked roast or beef tips)

1 Small 4 oz. can chopped green chilies( do not drain)

1 T. Chopped Jalapeno Peppers (from a jar pickled)

1/2 Cup chopped green onions

Garnish and topping

1/2 Cup Nacho flavored Dorito's crushed

1 Package Pre-packaged Guacamole or make fresh

Remaining 1/4 chopped green onions

Preheat oven to 350 degrees.

Spray the bottom and sides of a 9 inch pan. I used a 9 in spring form round pan, but any 9 in. pan will work

Tear the corn tortilia's into pieces covering the bottom of the pan. Give the tortilia's a spray of Pam, to give a light coating.

Mix the cream cheese, 2 eggs, sour cream and package of taco seasoning until well blended and smooth.

Stir in 1/2 of the grated cheddar cheese reserving the remaining for the topping, shredded beef, chopped green chilies, and jalapeno peppers. Only use 1/2 of the green onions into this mixture. You are reserving the remaining for the garnish. Do not mix this step with the mixer. Stir until well blended.

Bake for 45 min. to 50 min. Mixutre will not giggle when done.

Remove cheesecake and while hot, sprinkle remaining cheddar cheese over the top to melt. Sprinkle remaining green onions over the top. Followed by desired garnish. I serve ours with the Crushed Dorito's and 1 to 2 T. Guacamole.

Let stand 15 min before cutting and serving.

Sprinkle crushed Dorito's over the top, followed by 1 or 2 T. of Guacamole.

The chips will soften if left on for a length of time, so I recommend putting them on before serving, as with the Guacamole.
