Question about affidavit of support

Timeline

Hello all,

My fiancé has an interview scheduled on February 12th at the consulate in Guayaquil, Ecuador for his K1 visa. I have had documentation prepared for the affidavit of support for quite a while now. My question is what if I haven't filed for income taxes for 2007 by that point? I do have transcripts from 2004, 2005, and 2006 for as evidence for the affidavit.

Also, come to think of it, I had my form notarized in November - will that be too old in February? My letter from my employer stating my salary was also from November.

I'm grateful for any opinions you all may provide me.

June 4: Mailed I-129F petition

June 8: NOA-1

June 19: Check cashed

June 23: Received NOA-1 hard copy in mail

October 24: Touched!!

October 25: NOA-2 issued according to the USCIS website!!

October 26: Touched again.

October 29: Received NOA-2 hard copy in mail.

February 12: Interview in Guayaquil

He doesn't need the 2007 return http://www.state.gov/documents/organization/86989.pdf

However it wouldn't hurt to have an updated employment letter, but probably not really necessary.
