NOA2 expiration date

Our NOA2 is valid through April 10th 2009. The case is at the Embassy in Zagreb now, my interview date has been scheduled. We 'lost' quite a bit of time (52 days) in AP at NVC so things are a little bit out of order now.

My fiance would like to be here for the interview, which is why we need to reschedule the date. Only two dates work well for us (airline, his job, etc) so the interview could be on April 2nd or April 9th. The USEM in Zagreb processes a very small number of immigrant visas, is very friendly and has no problems with interview dates being rescheduled.

I have the following questions, though:

1. Is it too risky to ask for our interview to be scheduled for April 9th?

What happens if we get denied, put into more AP, or if they simply ask for more documentantion, or anything that would happen on, say, April 11th or after? I was told, at NVC, that a case cannot expire as long as it's in USCIS/NVC/USEM hands - it gets automatically extended as long as they have it. Is this correct?

2. How hard or bad is it for your case to be extended? How does one go about it?
